Have you ever tried mesquite wood? It is really good!
Hickory is good but not plentiful in the west. You can usually find it bagged up into large chips that you can get wet and throw into the fire. Soak the chips until they are really wet.
Also if you are growing a rosemary bush you can throw some of that on the fire for lamb and poultry. Get it wet first.
