You got a New Braunfels smoker right? I love smokers and have had all kinds for years. I have the vertical model. It's the one that looks like a short fat rocket with no fins. Anyway I always smoke a turkey for Thanksgiving. Boy do they turn out real nice. The skin will turn black and look ugly but you just peel it off and the turkey is great. I'll have to try the brisket. Actually, I'll have to get my wife to let me buy the smoker you have.
