I am an employer, I look at a lot of resumes. Here are my suggestions...

DO list any kind of experience, paid or not. It is okay to say he was a full time missionary. I'd say he was an "Independent Christian Missionary", to avoid the question, "With what organization?".

Inside of that heading, list any and all accomplishments. Try to hook them up with job titles from the real world.

Example:

Leader = Manager
