You maybe know this, but if you don't: Did you know if you give a garlic clove a good smack, the
peel comes right off.
Peel garlic cloves and freeze 'em in zipper-top bags. You can chop the frozen garlic as easily as fresh, and it won't smell up your hands or cutting board.
